Avocado & Black Bean Salad

One of My Summer Favorites:

Avocado, Mango, & Black Bean Salad


1 cup of cooked black beans , 1 small red onion thinly sliced,  4 roma tomatoes chopped, 1 green and 1 red bell pepper chopped, 1 cup of cooked corn kernels, 4 oz of cilantro leaves chopped, 2 avocados chopped, 1 mango peeled and chopped. 5 1/2 oz Arugula


1 garlic clove crushed, 1/4 cup olive oil, Juice of one lime, 1 tsp cumin, cayenne to taste - Wisk all ingredients together.

Mix beans, onion, tomato, bell peppers, corn, cilantro, avocado, mango and rocket together. Add dressing and toss gently


P.S.  - I often make this without the Arugula, still delicious and lasts in the fridge without wilting.  

P.S.S. - For a milder flavor I substitute leeks for red onions
